Farallon General Manager Lori Theis is one of the few women in America at the helm of a large, bustling restaurant. On any given day she is in contact with literally hundreds of people--her own staff, restaurant guests, purveyors and colleagues. It is here that she is happiest, energized by the constant change and element of surprise that each day brings. Theis has been managing restaurants in San Francisco for 14 years, buying wine for and running the dining room for some of the best chefs and restaurateurs in the city: Jeremiah Tower, Wolfgang Puck, Harry Denton, Bill Kimpton and Nancy Oakes.
